My favorite of these is Road Rage in which the only goal is to destroy your opponents with your vehicle as many times as possible before time expires or before you become too destroyed yourself. But it keeps your interest because it has many diverse game modes and some that criss cross into each other for explosive fun. The gameplay can at times feel repetitive mainly due to the reuse and restructuring of the same tracks, but, the game still has a decent number of tracks and it is a racing game after all so some things might feel a little bit of the same. For 2004 this game was the sh*t in realistic graphics and I say that it still looks pretty damn good.
